Can I just add the ingredients and not cook them in the morning?

You can't just add the ingredients and leave them to rise overnight. The yeast needs to be activated in a warm environment, which means you must give it time for the two cups of flour, one cup of water, and half a tablespoon of sugar to warm up before mixing it with your eggs and salt. The rising time depends on how warm your kitchen is; typically, this recipe takes about 1-2 hours.

How long do I leave to prove the dough?

The longer you leave the dough to rise, the better your buns will turn out. Leave it to rise for 1 hour or overnight in the fridge if you have time. If you are in a hurry and need to shape and bake them within 30 minutes of kneading the dough, then leave it on your worktop. Make sure you cover it with cling film if there's any chance of humidity – this prevents a soggy bottom from forming from all that moisture building up under the plastic!

What filling do you use for hot cross buns?

As far as fillings go, there are a few options. You can try jam, cinnamon sugar, Nutella, or butter. Some recipes call for a cross made with white icing on the bun, while others use a glaze over the whole bun.

Also, note that you could easily add extra spices such as cinnamon/nutmeg/cloves without affecting anything else these are just my preferences!

This is a great recipe for making hot cross buns, but there are different ways to spice it up.

If you want to vary the recipe, add raisins or sultanas, orange zest (for a Christmassy flavor), some chopped mixed peel, and chopped mixed spice. Alternatively, mix in some chopped candied peel for an extra kick of sweetness.
