Making your bread at home can be a wonderful experience. You have total control over the ingredients and enjoy the process of kneading dough and watching it rise. There are many different types of bread machines on the market, but not all of them are created equal. In this article, we'll take a look at some common questions about using your bread machine to make einkorn bread, as well as some tips for improving your results.
Q1: I'm looking to buy a bread machine, and I'd like to use it for einkorn. Are there any models that work better than others?
You may have to experiment with different recipes, and finding einkorn flour in stores may be difficult.
If your machine has a whole grain setting, you should use it.
If your machine doesn't have a whole grain setting, try adding the dough hook attachment (or some other mixing paddle) when making einkorn bread recipes.*
Q2: Do you have any suggestions on the best use the machine if I don't want to use the einkorn flour available in stores?
If you have access to einkorn flour, I recommend using it in your bread machine. It has a lower gluten content than wheat flour and acts more like a grain than a bready substance. However, if you don't want to use einkorn flour, or can't find any in your area, there are some ways around this! You can use regular wheat or white flour instead of the einkorn. This may result in a drier texture (and very dark bread!), but it will still taste great! Another option is to mix equal amounts of einkorn and regular flours this will give you something closer to traditional breads made with 100% wheat flour. If you want even more variety, try substituting other grains for some of the all-purpose or bread flours (such as rye or spelled).
Q3: How far in advance do you proof your yeast? I've tried many different recipes and never proved them correctly.
Proofing your yeast in a warm environment for 5-10 minutes is important. If it doesn't bubble on its own or when you add sugar, then your yeast is dead, and you need to start over with new packets. You can also use the water temperature test: if it's too hot (over 110°), it will kill the yeast; too cold (under 80°) will make it inactive.
Q4: I want to make a loaf with some added fruit, like raisins. Do you add the fruit before or after the rise?
The fruit is best added after the rise because the fruit will soften and spread out during the rise.
When adding raisins to your dough, remember that they cook up smaller than you might expect, so be sure to chop them well before adding them to your mix. Also note that when making a sweet dough with raisins, you may find an overly-sweet loaf (which can be very tasty!). If this is undesirable for your tastes, try reducing the amount of sugar in your recipe or using less sweet varieties of apples such as Granny Smith or Honeycrisp instead of Golden Delicious or McIntosh apples.
